Watermelon-Cucumber Salad


Watermelon is such a refreshing summer fruit! This salad combines it with cucumber, feta cheese, and a little olive oil and red wine vinegar to make a deliciously light summer meal or side dish. I just received some cucumbers from a friend who has a thriving vegetable garden, so I decided it was the perfect time to make this salad–especially since the day was particularly warm. WATERMELON-CUCUMBER SALAD by Cottage Flavor 
Makes 4-6 servings
  • 6 cups diced watermelon
  • 3 small or 2 medium size cucumbers, thinly sliced 
  • 3 Tablespoons olive oil
  • 3 Tablespoons red wine vinegar
  • 1/4 to 1/2 teaspoon salt (or more, to taste)
  • 1/4 to 1/2 teaspoon pepper (or more, to taste)
  • 1/3 cup crumbled feta cheese, for garnish 
In a large bowl, combine diced watermelon, sliced cucumbers, olive oil, red wine vingegar, salt, and pepper; toss to combine. Divide among 4 to 6 salad plates and garnish equal amounts of crumbled feta cheese over each salad.
