Cool, Creamy, Cheesy Corn Dip

This is a wonderful dip I found at Allrecipes.com . If you like corn, cheese, and sour cream, then you are sure to like this! I modified it a little by adding some garlic powder, a little cumin, lime juice, and a little extra jalapeno juice I saved from the can. It's perfect for a casual party or get-together, and it's so easy to prepare. The jalapenos and jalapeno juice make it mildly spicy–if you want a spicier taste, just add more jalapeno juice to the mixture. For a creamier dip, use the lesser amount of shredded cheddar cheese; for a thick, hearty dip, use the full 3 cups of cheese. We were having a very chilly November day recently...a perfect day for warming up the kitchen with a special baked treat! Butterscotch is a great fall flavor and I decided it was just the right time to make some Oatmeal Scotchie Bars . The recipe I'm sharing with you is very slightly adapted from a recipe I found at VeryBestBaking.com . It's one of those classic recipes that have been around for some time. I decided, instead of making cookies, to make cookie bars, and they turned out wonderfully! You bake them in a 15 x 10" jelly-roll pan and you get lots of thin, crispy, oatie bars with a texture just like the cookie! Making cookie bars instead of individual cookies is so easy and convenient, especially if you are in a time crunch. Cheesy Cream of Onion Hash Brown Casserole

My friend Tammy made these potatoes one day for a group breakfast and they were so delicious...so creamy and cheesy! She gave me her recipe and I recently made them...and now I'm sharing the recipe with you! I modified her recipe slightly by adding an extra cup of cheese. You can also add some crumbled bacon...or green onion slices would be good in this, too. Either mix the ingredients the night before and bake it in the morning, or mix it and bake it the same day. It's a wonderful side dish to serve at any meal...it works just as great for breakfast or brunch as it does for lunch or dinner. Here's the recipe...
